1 package plain hummus
2 cucumbers, sliced
1 c sun dried tomatoes, finely chopped
½ lemon
Optional:
Extra Olive Oil
Dried Parsley 
Flakey Salt

Combine hummus with juice from half a lemon, ¾ c chopped sun dried tomatoes and a drizzle of olive to thin out the hummus.

Pipe the hummus in a gallon or piping bag onto sliced cucumbers. Top with the rest of the sun dried tomatoes, parsley and flakey sea salt!

For the filling:
1 rotisserie chicken, skin removed and meat chopped
1 (15.5 oz) can black beans, drained and rinsed
1 cup frozen or canned corn
¼ cup chopped cilantro
¼ cup chopped green onions
1 medium red onion, chopped
Juice of 1 lemon, about 2 tablespoons 
¼ cup extra virgin olive oil
2 ½ teaspoons flaky sea salt, or to taste

Arugula pesto is a great way to add extra fiber to Arugula pesto is a great way to add extra fiber to any meal, plus it tastes amazing! This pesto will add about 3g of fiber to any sandwich, pasta or bowl. It’s the perfect addition, a little fiber goes a long way!

Ingredients:
2 c arugula 
Add any extra herbs on hand if desired, I am using some extra parsley, basil and dill
3 garlic cloves
½ c pine nuts 
2 tablespoons lemon juice (about half a lemon)
1 teaspoon flaky sea salt, more to taste
¼ c extra virgin olive oil, more as needed

Blend using a food processor and add any extra salt or lemon juice to taste. You can thin out the pesto by adding more olive oil if needed!
