For the filling:
1 rotisserie chicken, skin removed and meat chopped
1 (15.5 oz) can black beans, drained and rinsed
1 cup frozen or canned corn

Juice of 1 lemon, about 2 tablespoons 
¼ cup extra virgin olive oil

Arugula pesto is a great way to add extra fiber to Arugula pesto is a great way to add extra fiber to any meal, plus it tastes amazing! This pesto will add about 3g of fiber to any sandwich, pasta or bowl. It’s the perfect addition, a little fiber goes a long way!

Ingredients:
2 c arugula 
Add any extra herbs on hand if desired, I am using some extra parsley, basil and dill
3 garlic cloves
½ c pine nuts 
2 tablespoons lemon juice (about half a lemon)
1 teaspoon flaky sea salt, more to taste
¼ c extra virgin olive oil, more as needed

Blend using a food processor and add any extra salt or lemon juice to taste. You can thin out the pesto by adding more olive oil if needed!

Leftover Pulled Pork (I had some leftover from the freezer that I reheated)
Russet Potatoes
Butter
Shredded Cheese
Green onions
Sour Cream
Barbecue Sauce

Buffalo Chicken Wraps
Large flour tortillas (I had some frozen tortillas I thawed)
Chicken Breasts
Shredded Cheese
Lettuce 
Tomatoes
Shredded Carrots
Ranch
Buffalo Sauce

Crunchy Beef Tacos
Tacos Shells (I had leftover hard and soft tacos I needed to use up)
Ground Beef

American Waygu Smoked Brisket 1) Preheat pellet s American Waygu Smoked Brisket

1) Preheat pellet smoker to 250 degrees F

2) Trim brisket and place fat trimmings into a foil pie pan

3) Apply mustard binder (optional)

4) Apply generous coat of salt and pepper seasoning blend

5) Apply a layer of a sweet seasoning blend (your preference here)

6) Place brisket on smoker and insert thermometer probe

7) Smoke until the internal temperature of the brisket reaches 160 degrees F

8) Pull the brisket and increase the smoker temperature to 275 degrees F

9) Spray butcher paper with apple cider vinegar, pour some of the fat drippings from the pie pan on top of the brisket and wrap

10) Place brisket and remaining fat drippings back in smoker until the internal temperature reaches 200 degrees

11) Remove the brisket and keep in warmer at 150 degrees overnight or for at least 4 hours before serving

12) Slice and give brisket another drizzle of fat drippings

I was tasked with bringing dessert to a summer bbq I was tasked with bringing dessert to a summer bbq and couldn’t wait to try this Key Lime Pie from @thegirlwho8everything. Spoiler alert, it was a hit!!

I made these pies 2 days in advance and popped in the freezer with saran wrap. The day of the party, I pulled from the freezer and defrosted in the fridge. I topped with fresh whipped cream and limes 🍋‍🟩 before serving!

Pre-grilled chicken

Ingredients
For the Rolls:
Spring Roll Rice Wrappers
Cabbage, thinly sliced
Carrots, shredded 
Red bell pepper, thinly sliced
Cucumber, sliced into thin pieces
1 lb shrimp
Salt & Pepper or your favorite all purpose seasoning (I’m using Kinder’s Salt, Pepper & Garlic)
Olive oil or Avocado Oil

For the Peanut Dipping Sauce:
½ c peanut butter 
2 tablespoon honey
2 tablespoon rice vinegar 
1 tablespoon & 1 teaspoon soy sauce
1 teaspoon fish sauce
1 teaspoon garlic powder
1 teaspoon ginger powder
3 tablespoon oat milk, almond milk or water (add 1 tablespoon at a time until you have achieved your desired consistency)
Sesame seeds for topping (optional)
