Bacon Breakfast Casserole Recipe
This healthy Bacon Breakfast Casserole Recipe is great for an easy prepared breakfast for the week! Ingredients
- 1 package of bacon 12 oz, cooked and slightly cooled
- 3 bell peppers chopped (red, yellow & orange if available)
- 4 cups kale chopped
- 12 eggs
- 1 cup heavy cream
- 1 ½ teaspoon flaky sea salt
- ½ teaspoon black pepper about 6 grinds
- 1 cup shredded cheddar cheese white or sharp cheddar
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F. Place bacon on a cookie sheet laid flat and cook until crispy 25-30 minutes. Once cooked, remove from the oven and set aside to cool. Chop bell peppers into small chunks and chop kale into fine bite size pieces. In a medium bowl, whisk together the eggs, heavy cream, salt and black pepper, set aside.
- Drizzle olive oil in the bottom of a 9x11 or 9x13 baking dish. Chop bacon into bite sized pieces and place in the bottom of the baking dish, then add the kale and bell peppers. Add the shredded cheese on top next and then pour the egg mixture evenly over the dish.
- Bake at 375°F for 35-40 minutes or until the center is firm and no longer runny.
