Greek Pita Wraps

Ingredients
For the Steak & Marinade:
- 1 lb flank steak
- 3 garlic cloves minced
- 2 tablespoon fresh dill chopped
- 2 tablespoon pickle juice
- 2 teaspoon flaky sea salt
- ¼ teaspoon of pepper about 6 pepper grinds
- ¼ c olive oil
- Juice of ½ lemon about 1-2 tbsp
- 1 tablespoon kalamata olive juice optional
For the Pita:
- Pita Bread
- 1 teaspoon olive oil
- For Side Veggies and Dip:
- ½ cucumber sliced
- 1 beefsteak tomato sliced
- ¼ white onion sliced
- Kalamata olives
- Extra dill for serving optional
- One container of Tzatziki Dip
Instructions
- Place the flank steak in a gallon plastic bag and hammer with a meat mallet until thinned out about half the original thickness (This step is optional, but creates a quicker cook and more even steak pieces).
- To a small bowl, add the garlic, dill, pickle juice, salt, pepper, olive oil, lemon juice and olive juice. Stir the marinade and place into a bag and marinate for 30 minutes. You can easily make this the night before or earlier in the day to marinade as well.
- While the steak is marinating, chop your cucumbers, tomato and onion for serving. Heat a skillet or griddle to medium heat and lightly coat the pita bread in olive oil and toast lightly on each side, set aside.
- Once the steak is done marinating, heat the skillet to medium high and cook for about 3-4 minutes on each side. Let the steak rest for at least 3 minutes before slicing.
- Slice the steak against the grain into 2 inch pieces (this creates a more tender steak) and serve your pitas with the fresh vegetables, dill and tzatziki dip. Enjoy!
