This Almond Olive Oil Cake is to die for! It is packed with a rich almond flavor, pairs perfectly with the olive oil and is not overly sweet. This will be your new favorite dessert!

I love eating this almond olive oil cake year around, it's not too sweet and goes great with a cup of tea or coffee. If you are looking for the perfect dessert for Valentine's, Christmas or Thanksgiving, you can't go wrong with this almond olive oil cake!

Ingredients
- Flour: I always use organic flour as it makes the best cakes and is glyphosate free.
- Salt: I only had flaky sea salt on hand and this almond olive oil cake turned out perfect. You could also use coarse or table salt.
- Baking soda: A leavening agent that needs both a liquid and an acid to activate, assisting in the perfect consistency for your cake.
- Baking powder: A leavening agent to help give your cake the perfect rise and texture!
- Extra virgin pure olive oil: This might be the most important ingredient for this cake. Use pure extra virgin olive oil preferably find one that comes in a glass bottle for the highest quality.
- Milk: I like to use whole milk, but you could also substitute for 2% or almond milk.
- Eggs: Try to use pasture raised eggs for the most nutrition and best quality eggs.
- Sugar: I am using organic sugar here, you could also use date or monk fruit sugar.
- Almond extract: Be sure to find a pure almond extract for the best flavor.
- Sliced almonds: Pre-sliced thin almonds are best here, you could always purchase whole almonds and crush them if you can't find almonds that are sliced.
- Powdered Sugar: Also called confectioners sugar, you just need a little bit for the perfect topping for your cake!

Instructions for Almond Olive Oil Cake
Step 1: Combine the flour, salt, baking soda and baking powder and set aside.
Step 2: In another bowl, whisk the olive oil, milk, eggs, sugar and almond extract.
Step 3: Combine the wet ingredients with dry and whisk until smooth.
Step 4: Line the bottom of the pan with sliced almonds, add the cake mixture and bake at 350°F for 60-65 minutes. Serve with powdered sugar and more almonds, enjoy!
Hint: l like to serve my almond olive oil cake upside down so the top is flat and it looks great for presentation. If the top of the cake has rounded up, sliced off a layer of the top of the cake so it sits flat upside down.
Equipment for Almond Olive Oil Cake
10 inch cake round: 12 inch works even better if you have it, allowing plenty of room for the cake to rise.
Whisk: No electric mixer needed, you can easily make this recipe with a whisk!
Cooling Rack: This is optional, but I find as you let the cake cool it does much better with a cooling rack!
Storage
Store the sliced cake in a cake stand with a lid. I have a plastic sealed cake dome that works great for storing! You can store at room temp for 3-4 days. This cake will also freeze nicely if you would like to freeze and save for later!

Almond Olive Oil Cake
Ingredients
- 2 ½ c flour 300 g
- 1 teaspoon salt
- ¾ teaspoon baking soda
- ¾ teaspoon baking powder
- ⅔ c extra virgin pure olive oil
- 1 ¼ c milk
- 3 eggs
- 1 ½ c sugar
- 3 teaspoon almond extract
- ½ sliced almonds ¼ c reserved for bottom of cake
- ⅛ c powdered sugar
Instructions
- Preheat the oven to 350°F. In a medium bowl combine the flour, salt, baking soda and baking powder and set aside.
- In another bowl, whisk the olive oil, milk, eggs, sugar and almond extract. Combine the wet ingredients with dry and whisk until smooth. In a 12 inch round baking pan, line with parchment paper and drizzle with olive oil. Layer the bottom of the pan with ¼ c of the sliced almonds, making an even layer on the bottom of the pan.
- Add the cake mixture to the pan and bake for 60-65 minutes until golden brown. To know when the cake is done, it should come out clean with a toothpick and the center should not jiggle.
- Let the cake cool for about 10 minutes in the pan and then transfer to cool on a cooling rack for another 20-30 minutes. Once cooled, dust with powdered sugar and more sliced almonds, enjoy!
