Cilantro Salmon
This Cilantro Salmon is part of my Dinner Essentials series where I help you make easy and quick meals for dinner. The vibrant cilantro and lemon flavors take this dish to the next level, it’s sure to be a staple in your home!
Ingredients
For the Salmon:
- 1 lb wild caught salmon fillets
- 4 tablespoon chopped cilantro
- 2 tablespoon olive oil
- 1 ½ teaspoon flaky sea salt
- ½ teaspoon of pepper about 9-10 pepper grinds
- Juice of 1 lemon
- 1 additional tablespoon olive oil for sheet pan
For the Broccoli:
- 1 broccoli head
- 1-2 tablespoon olive oil
- ¼ teaspoon of pepper about 4-6 pepper grinds
Optional:
- Parmesan cheese for the broccoli garnish any hard cheese like parmesan, romano or pecorino will work
- Lemon slice for the salmon garnish
Instructions
- Preheat the oven to 425℉.
- Chop cilantro and place in a bowl with olive oil, sea salt, pepper and lemon juice, stir to combine and set aside. Chop broccoli removing the large stalk and chopping into smaller florets. Lightly drizzle olive oil on a sheet pan and place the salmon down first. Pour the salmon cilantro sauce on top of the salmon and cover to coat the top of the salmon.
- Add the chopped broccoli to the side of the sheet pan and lightly drizzle the broccoli with olive oil, salt and pepper. Bake in the oven for 15-18 minutes or until the Salmon is 145℉ internally. Serve with a garnish of parmesan cheese for the broccoli and a lemon slice on the salmon. Enjoy!
