This flank steak recipe takes about 5 minutes of prep time and I can throw it in the oven, making it a great way to have a delicious meal ready in less than 30 minutes. I will show you how cooking flank steak can be easy just using sheet pans!

Even my toddler eats this, and I'll generally serve it with a side of cheese and fruit for the perfect healthy meal!

- 1 - 1 ½ pound flank or skirt steak
- 3 tri-color bell peppers
- 1 white onion

- Black pepper
- Extra virgin olive oil or avocado oil

Instructions for Oven Flank Steak
Step 1: Preheat your oven to broil on high and set your top oven rack on the highest setting in your oven.
Slice your bell peppers and onion into thin wedges. Drizzle your rimmed baking sheet with 1 tablespoon of olive oil and evenly mix the peppers and onions in the olive oil. Add 1 teaspoon of flaky sea salt and ¼ teaspoon of black pepper, about 6 pepper grinds.
Step 2: Pat down your skirt steak with a paper towel to ensure it is dry. On another rimmed baking sheet, add 1 tablespoon of olive oil and cover your flank or skirt steak in the oil. Season with 1 ½ teaspoon of flaky sea salt and ¼ teaspoon of black pepper, about 6 pepper grinds.
Step 3: Place both baking sheets in the preheated oven. The bell pepper and onions should cook in 8-10 minutes, they should be slightly brown on the edges and fork tender.
The cooking time for the beef flank steak is about 5-6 minutes per side until done to your liking. I like to cook my flank steak in the oven at medium pulling around 140°F as the temperature will rise as the steak rests.
Step 4: Use a meat thermometer or instant-read thermometer to check the internal temperature to your degree of doneness as desired.
Rest the steak for 5 minutes before slicing into thin slices against the grain, serve with bell peppers and onions.

- Medium-Rare Steak: 130-135°F
- Medium Steak: 140-145°F
- Medium-Well Steak: 150-155°F
- Well-Done Steak: 160°F+
For the perfect cook, pull your steak 3-5 degrees lower than your desired temperature as the steak will finish cooking as it rests.

Top Tips
Room Temperature Steak: The first thing to do with your steak is to let it come to room temperature before cooking for an even cook. If you are in a pinch for time, you can skip this step, but I love to do it if I can remember for the perfect juicy steak!
Slice Against the Grain: To ensure the most tender and juicy steak, place steak on a cutting board and cut thin slices against the grain by using a sharp knife and cutting the opposite direction of the muscle fibers on the steak.

Cast-Iron Skillet Method
This oven flank steak on sheet pans is great way to prepare skirt steak when I need a minimal effort meal on weeknights that the whole family will love! If you have more time and want the perfect golden crust on your skirt steak you can also cook in a large skillet or cast iron.
If cooking in a large skillet, on medium-high heat, sear the skirt steak about 3 minutes per side until golden brown, about 6-7 minutes total and the internal temperature reaches your desired doneness for the perfect easy flank steak.
