This dijon chicken recipe takes about 5 minutes of prep time and I can throw it in the oven, making it a great way to have a delicious meal ready in less than 30 minutes.

This recipe allows me to serve a protein entree and a vegetable side dish for the perfect meal. Ingredients
Main Ingredients:
- Boneless skinless chicken breasts
- Roasting vegetables such as green beans, zucchini squash, or asparagus
- Creamy dijon mustard sauce

Instructions
Step 1
Preheat your oven to broil on high and set your top oven rack on the highest setting in your oven. Add 1 tablespoon of olive oil on two baking sheets and set aside. Slice your boneless skinless chicken breasts half in thickness, making about 4 thinly sliced chicken breasts.
Step 2
Cover the boneless skinless chicken breasts evenly in the creamy dijon mustard sauce. Evenly coat the chicken with 2 teaspoon flaky sea salt and ¼ teaspoon black pepper, about 6 pepper grinds.
Step 3
Toss the vegetable of your choice with 1 tablespoon of olive oil, 1 teaspoon of flaky sea salt and ¼ teaspoon black pepper, about 6 pepper grinds.
Step 4
Bake for 10-15 minutes total, flipping the chicken breasts over halfway through the cook. Depending on your veggies, check for doneness around 10-12 minutes to determine if they need to cook longer. The internal temperature of the chicken should be 165°F. Pull out the chicken to rest for 3 minutes before slicing.

Variations
- Skinless chicken thighs - If you don't have boneless skinless chicken breasts, you can also make the perfect juicy chicken thighs. You may need to extend the cooking time depending on the size of the chicken thighs.
- Sauce: I love using creamy dijon mustard sauce for this recipe, but feel free to get creative! Do you have barbeque sauce or an italian dressing laying around that you could use instead?
- I am all about finding easy recipes during busy weeknights and even better you can save money on your groceries by using what you already have!
- Roasting Vegetables: I have made this recipe using zucchini wedges, green beans and broccoli, but you can't go wrong with any good roasting vegetable. Use up what you have in the fridge or pick up a simple seasonal roasting veggie at the grocery store or farmer's market!

Top Tip
I love making this dijon mustard chicken on sheet pans when I need a minimal effort meal on weeknights that the whole family will love! If you have more time and want the perfect golden crust on your chicken you can also cook in a large skillet or cast iron.
If cooking in a large skillet, on medium-high heat, sear the chicken breasts about 5 minutes per side until golden brown and the internal temperature reaches 165°F for the perfect easy chicken recipe.

Ingredients
Main Ingredients:
- 1 - 1 ½ pound flank or skirt steak
- 3 tri-color bell peppers
- 1 white onion
Pantry Staples:
- 2 ½ teaspoon flaky sea salt
- 1 teaspoon black pepper
- 2 tablespoon extra virgin olive oil
Instructions
- Preheat your oven to broil on high and set your top oven rack on the highest setting in your oven.
- Slice your bell peppers and onion into thin wedges. Drizzle your baking sheet with 1 tablespoon of olive oil and evenly mix the peppers and onions in the olive oil. Add 1 teaspoon of flaky sea salt and ¼ teaspoon of black pepper, about 6 pepper grinds.
- Pat down your skirt steak with a paper towel to ensure it is dry. On another baking sheet, add 1 tablespoon of olive oil and cover your flank or skirt steak in the oil. Season with 1 ½ teaspoon of flaky sea salt and ¼ teaspoon of black pepper, about 6 pepper grinds.
- Place both baking sheets in the oven. The cooking time for the beef flank steak is about 5-6 minutes per side until done to your liking. I like to cook my flank steak in the oven at medium pulling around 140°F as the temperature will rise as the steak rests. Use a meat thermometer or instant-read thermometer to check the internal temperature to your degree of doneness as desired.
- The bell pepper and onions should cook in 8-10 minutes, they should be slightly brown on the edges and fork tender.
- Rest your steak for 5 minutes before slicing into thin slices against the grain, serve with bell peppers and onions.
